Shincha Kunpu ($19.75)

Shincha Kunpu is an Eighty-Eighth (88th) Night Shincha that is lightly steamed. Eighty-Eighth Night Shincha refers to Shincha picked on the 88th day after the first day of spring in the traditional Japanese calendar. It is around May 2nd. The Eighty-Eighth Night - "Hachijuhachiya" in Japanese - is a special day in Japanese agriculture since it is considered about the time all the plants and vegetation begin to sprout.

Den's 2019 Shincha Kunpu Tasting Comments:
Like every year, I tasted Kunpu with Hashiri Shincha because both are lightly steamed Senchas picked about ten days apart. This gives me a good sense of how the young leaves matured and exhibit different tastes over that period.
As I mentioned in my Hashiri tasting notes, Hashiri had a bit of a pale taste this year and I was worried that the same might be true for Kunpu. When I had the first sip, I was impressed with the elegant and mild flavor. No bitterness at all. While I felt an aftertaste, the warm Umami appeared in my mouth and gradually wrapped from nose to throat. This year?s Kunpu simply reminded me of very good traditional Shizuoka Sencha. Then, since I personally like stronger cup, I brewed Kunpu again with hotter water around 200F. Now I found the slightly more intense taste of Kunpu. The tasty bitterness stimulated my tongue making my mouth comfortable. However you choose to brew it, traditionally or casually, this bountiful Shincha won?t betray your taste buds!

Water: 2oz @ 160F
Leaves: 2 grams or 1 rounded teaspoon
Steep: 90 sec
2nd Cup: Water @ 180F; Steep 30 sec
